Lay down a sheet of wax or parchment paper on your work surface. Coat the gummy molds with cooking spray to help release the gummies from the mold and set on top of the wax paper.
Add the coconut oil, water, and soy lecithin to a sauce pan. Over low heat, whisk constantly until the lecithin granules are dissolved and the mixture is a consistent uniform texture.
While continuing to whisk, add the Jell-O package and the unflavored gelatin and citric acid, if using. Whisk over low heat until smooth and uniform in texture.
Once mixture is uniform, pour into gummy molds working as quickly as possible. The warmer the mixture, the better it will form in the molds
Place molds in the freezer for 30 minutes to help the mixture firm up. After which, pop the gummies out of the molds onto a piece of wax or parchment paper to air dry.
Once gummies have finished drying, they can be stored at room temperature or in the fridge in an airtight container.
